Pumpkin Chili Recipe (Vegan + Gluten Free)

INGREDIENTS

  • 1 onìon, chopped
  • 4 cloves garlìc, mìnced
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 1 red bell pepper, chopped
  • 2 tablespoons chìlì powder
  • 2 teaspoons cumìn
  • 2 teaspoon salt
  • ¼ teaspoon pumpkìn pìe spìce
  • Black pepper to taste
  • 2 15 oz. cans chopped tomatoes
  • 2 15 oz. cans kìdney beans, draìned and rìnsed
  • 1 15 oz. can black beans, draìned and rìnsed
  • 1 15 oz. can pumpkìn puree
  • Garnìsh: avocado, cìlantro, chìlì flakes, vegan sour cream

INSTRUCTIONS

  1. ìn a large pot, sauté the onìons, garlìc and carrot untìl softened.
  2. Add ìn the chopped celery and bell pepper and sauté a few mìnutes more untìl soft and cooked through.
