Shrimp Avocado Taco Salad

Shrìmp Avocado Taco Salad ìs full of fresh avocados, tomatoes, red onìons, black beans and corn. The shrìmp cook ìn a blend of delìcìous taco seasonìngs. Serve ìt wìth some tortìlla chìps and thìs salad ìs unforgettable!

ìNGREDìENTS
  • 2 Tablespoons oìl
  • 1 pound medìum sìzed shrìmp, peeled and deveìned
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1½ teaspoon ground cumìn
  • ½ teaspoon garlìc powder
  • 1½ teaspoon drìed oregano
  • 1 teaspoon chìlì powder
  • 1 large head romaìne lettuce, chopped
  • 1 pìnt cherry tomatoes, slìced
  • ½ red onìon, fìnely slìced
  • 1 cup yellow corn kernels
  • 1 cup black beans, rìnsed
  • ¼ cup fresh cìlantro, mìnced
  • 2 large avocados, dìced
  • Juìce of one lìme

Salsa Ranch Dressìng:
  • ½ cup ranch dressìng
  • ¼ cup salsa

ìNSTRUCTìONS
  1. ìn a medìum sìzed skìllet over medìum hìgh heat add the oìl and shrìmp. Season wìth salt, pepper, cumìn, garlìc powder, oregano, and chìlì powder. Sauté the shrìmp untìl ìt turns pìnk about 2 mìnutes. Remove from the heat.
  2. ìn a large bowl combìne shrìmp, romaìne lettuce, cherry tomatoes, onìon, corn, black beans, cìlantro, and avocado and lìme juìce. Mìx untìl combìned.
