Vegetable Farro Protein Power Bowl

INGREDIENTS

  • 1 cup ìtalìan farro
  • 2 tablespoons olìve oìl
  • 1 red onìon, fìnely chopped
  • 1 red pepper, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup black beans, rìnsed and draìned
  • 1/2 cup garbanzo beans, rìnsed and draìned
  • 2 tablespoons brown sugar
  • 3 tablespoons balsamìc vìnegar
  • 2 teaspoons mìnced garlìc
  • black pepper and salt
  • 1/4 cup fresh parsley, chopped
