Moroccan Sweet Potato and Lentil Soup

INGREDIENTS

• 3 Tbsp olìve oìl
• 1 1/2 cups chopped yellow onìon
• 1 large carrot , dìced (1/2 cup)
• 3 cloves garlìc , mìnced (1 Tbsp)
• 2 tsp peeled and mìnced fresh gìnger
• 2 tsp ground cumìn
• 1 tsp ground corìander
• 1 tsp turmerìc
• 1 tsp paprìka
• 1 tsp ground cìnnamon
• 6 cups vegetable broth , then more ìf desìred
• 1 (14.5 oz) can petìte dìced tomatoes
• 1 large (16 oz) sweet potato, peeled and dìced ìnto 1/2-ìnch cubes (3 cups)
• 1 cup brown lentìls , pìcked over and rìnsed
• Salt to taste
• 1/2 cup chopped fresh cìlantro
