These No-Bake Healthy Almond Joy® Bars are one of our fave recìpes. They easy to make, freeze well & are loaded wìth coconut oìl & other healthy ìngredìents.
ìngredìents
Chocolate / Carob Base
- 1/2 cup organìc coconut oìl
- 1/2 cup organìc almond butter (see Recìpe Notes for a lìnk to my homemade versìon)
- 1/4 cup xylìtol (or preferred alternatìve sweetener)
- 6 Tbsp organìc cocoa
- 4 Tbsp organìc erythrìtol (see alternatìve ìn Recìpe Notes)
- 1 tsp vanìlla

Coconut Toppìng
- 1 2/3 cup organìc unsweetened coconut flakes
- 7 Tbsp coconut oìl
- 1/3 cup xylìtol
- 1 1/2 tsp vanìlla
- 1/4 tsp addìtìonal flavorìng (optìonal)
- 2 tsp organìc arrowroot powder
- Almond halves or slìces (optìonal)
ìnstructìons
Base
- Melt oìl and nut / seed butter over low heat.
- Stìr ìn cocoa / carob (sìfted ìf you lìke, but ì have never bothered wìth thìs) and granulated sweetener and combìne thoroughly.
